Hi! My name is Giustino Riccio and I’m crazy about pizza. I’ve spent countless hours reading, experimenting, eating, traveling, Pizza Expo-ing, translating Italian articles word by word, daydreaming, nightdreaming, Instagram researching, and tearing my proverbial hair out, all in the name of honing the time-honored craft of pizza-making. Somewhere along the way, my quest to make great pizza required that I also know how to make great bread, so I’ve branched out into regular old breadmaking in recent years.
I’m ready to share what I’ve learned. I love making dough, and it turns out that I love talking about it, too! I have a lot of experience troubleshooting for bakers across the globe, taking into account what kind of oven they have, what dough recipe they’ve been using, their desired outcome, their climate, and more. Whether you’re an experienced home baker who wants to improve their results or a novice who’s excited to begin their journey with dough, I would be happy to help.
